The continuity tester only checks to map the cables end to end, pin to pin to see if they can carry electric current.

Network cable testers perform a whole series of test to see if the cabling plant can carry signals up to a set of specifications. The network cable tester will you if that cable can carry a 10M, 100M or 1G signal per the international specifications. THink of it as a stress test. IF it were a pipeline, the continuity tester would tell you the pipe can carry water. The network tester would tell you the rated water pressure for the pipe.
